This vibrant Orange Sesame Chicken Salad combines shredded cabbage, creamy avocado, and succulent grilled chicken, all tossed in a zesty soy, orange, and ginger dressing. Toasted slivers of almonds and sesame seeds add a delightful crunch to this refreshing and nutritious dish, perfect for any meal!

INGREDIENTS

4 cups shredded cabbage (green or a mix of green and purple)

2 ripe avocados, diced

2 cups cubed grilled chicken breast

4 green onions, thinly sliced

1/2 cup fresh cilantro, chopped

1/2 cup toasted slivers of almonds

2 tablespoons sesame seeds, toasted

1/4 cup soy sauce

1/4 cup fresh orange juice

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon grated fresh ginger

1 tablespoon honey

1 clove garlic, minced

Salt and pepper to taste

INSTRUCTIONS

1) In a large mixing bowl, combine the shredded cabbage, diced avocado, cubed grilled chicken, sliced green onions, chopped cilantro, toasted slivers of almonds, and toasted sesame seeds.

2) In a small bowl, whisk together the soy sauce, fresh orange juice, rice vinegar, sesame oil, grated ginger, honey, and minced garlic until well combined. Season with salt and pepper to taste.

3) Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated with the dressing.

4) Divide the salad into bowls or plates and enjoy immediately.
