Cooking with Chef Bryan - Pork Souvlaki

Pork Souvlaki is a beloved Greek dish featuring marinated pork skewered and grilled to juicy perfection. This traditional recipe is perfect for a summer barbecue or a delicious weeknight dinner, bringing the authentic flavors of Greece right to your table. Pair with my delicious Greek salad for a wonderful dinner!

INGREDIENTS

4 large tomatoes, coarsely chopped

1 cucumber, sliced

1 red onion, thinly sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

1 cup Kalamata olives

200g feta cheese, cut into cubes or crumbled

1/4 cup extra-virgin olive oil

1-2 tbsp red wine vinegar

- 1 tsp dried oregano

Salt and pepper to taste

INSTRUCTIONS

1) In a large salad bowl, combine the tomatoes, cucumber, red onion, and bell peppers.

2) Add the Kalamata olives and gently toss to mix the ingredients.

3) Top the salad with the feta cheese cubes.

4) In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.

5) Drizzle the dressing over the salad, and toss gently to combine.

6) Serve immediately, or refrigerate for up to 2 hours to let the flavors meld.
