Perfect for a weeknight dinner, it’s a delightful way to enjoy a classic Italian meal with a nutritious twist.

INGREDIENTS

4 medium zucchinis

1 tablespoon olive oil

1 pound ground beef (or turkey)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 large carrot, finely chopped

2 celery stalks, finely chopped

1 can (28 ounces) crushed tomatoes

1/4 cup tomato paste

1/2 cup red wine (optional)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil for garnish (optional)

Grated Parmesan cheese for serving (optional)

INSTRUCTIONS

1) Wash and trim the ends of the zucchinis.

2) Use a spiralizer to create zucchini noodles (zoodles). If you don't have a spiralizer, you can use a julienne peeler or a mandoline slicer.

3) Heat 1 tablespoon of olive oil in a large skillet over medium heat.

4) Add the zoodles to the skillet and sauté for 2-3 minutes until they are slightly tender. Season with salt and pepper to taste. Remove from heat and set aside.

5) In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened. Add the ground beef (or turkey) to the pot. Cook, breaking it up with a spoon, until it is browned and cooked through.

6) Stir in the crushed tomatoes, tomato paste, and red wine (if using). Add the dried oregano and dried basil. Season with salt and pepper to taste. Bring the sauce to a simmer, then reduce the heat to low. Let it simmer gently for 20-30 minutes, stirring occasionally, to allow the flavors to meld.

7) Divide the prepared zoodles among serving plates. Top each plate of zoodles with a generous portion of bolognese sauce. Garnish with fresh basil and grated Parmesan cheese, if desired. Serve immediately and enjoy your healthy, delicious meal!
